KINJO is seeking a highly skilled Sushi Chef to join our team in DUMBO, Brooklyn. This is a rare opportunity to work in a refined omakase-driven environment focused on precision, seasonality, and hospitality.

We are looking for a chef who is passionate about traditional Japanese techniques while maintaining the highest standards of quality, cleanliness, and teamwork.

The ideal candidate understands that sushi is not only about fish — it is about craft, discipline, and the guest experience.

• Prepare and present high-quality nigiri, sashimi, and omakase courses

• Maintain exceptional standards in fish butchery, portioning, and knife skills

• Ensure proper rice preparation and seasoning consistency

• Maintain strict food safety and sanitation standards

• Support daily fish preparation and mise en place

• Work collaboratively with the service team to deliver a seamless guest experience

• Maintain cleanliness and organization of the sushi station

• Assist with menu development and seasonal offerings

• Uphold KINJO’s standards for precision, professionalism, and hospitality

Qualifications

• Minimum 5 years experience working in a sushi-focused restaurant

• Strong knowledge of traditional Edomae techniques

• Skilled in fish breakdown and handling premium seafood

• Ability to work clean, fast, and organized during service

• Passion for Japanese cuisine and continuous improvement

• Positive attitude and team-first mentality

• Professional appearance and communication

Preferred:

• Experience working in high-end sushi or omakase restaurants

• Japanese language skills are a plus
